The Bikini Cocktail

Yields 10 people

To make the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Drink (yields 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Syrup: Put the listed ingredients in a pot, bring to a simmer, agitating to dissolve. After that, remove from the burner and leave to cool down entirely. Pour into a clean bottle, seal and refrigerate it in the fridge, it will last for about one month.

Preparing the Premix: Pour all the spirits and syrup into one big jug, allow it to infuse for an hour, then pass it through preferably using cheesecloth, to ensure it's fully clarified.

When ready to serve: Pour 85ml of your premix into a stirring glass filled with ice, gently stirring carefully for a minute until cold. Strain into an frosted cocktail glass or similar, garnish with a few cranberries adding the final touch with a quick spritz of the essential oil over the drink.
